December, 1955 saw the opening of Rollie's Pizza Shop by Rollie Phillips who, unknown to me at the time, was destined to become my husband. August 1958 was the day we tied the knot that was not severed until he died in 1981. All of which meant that I, a private secretary, became chief cook and bottle [in my case it was coffee mugs] washer and eventually manager, of Rolllie's Pizza Shops, until I sold them in 1975.

I have only told you that to let you know I know how hard food servers have to work because I've been there, done that.

I am currently reading a non-fiction book "YES! 50 Scientifically Ways to be Persuasive by a research team of Goldstein, Martin and Robert B. Cialdini and I am quoting from their research involving servers, asking you to bear in mind it is written as research.

"For the third set of diners, the servers first gave one piece of candy to each person at the table. They then turned away from the table, signaling that they were leaving. However, before exiting the area completely, they turned back to the diners and placed a second piece of candy on the table for each diner. The result? A 23% increase in tips."

That reminds me of the time a teen aged girl came into our shop. She had just returned from vacation in New Jersey where she had a delicious sandwich.I asked her what was on it. I had the fixings for it in the kitchen and fixed her one, served it on a paper plate, she paid me and when I cleaned her space I found a dime tip under
the paper plate. That was the beginning of steak and cheese subs in our pizza shop and we must have sold thousands since that night at 50 cents each. And it all started with a dime tip from a teenager.

If you have never been a waiter or waitress you have no idea how hard they have to work. I don't believe anybody should have to depend on tips, and I know restaurant owners pay what the law demands but that isn't enough to live on, so the next time
you can afford to go out to your favorite eating place and get good service, remember your server kindly.
